Snow topped mallow fudge bars..... Free from flour and gluten

There are times when you just HAVE TO HAVE a chocolate fix... This no bake bar is simplicity itself, takes minutes to make and you can eat it within the hour (you have to put it in the fridge first, you cant just eat the melted chocolate mix straight out of the bowl :D) Change the fruit and chocolate chunk/chip combination as the whim takes you......
What you need
250g plain chocolate
150g mixed dried fruit and chocolate – I used a ready bought mixture of dried cherries, white chocolate chunks and apple infused sultanas but you can use glace cherries, cranberries, milc chocolate chunks or chips, dried chopped apricots or raisins etc
180g mini marshmallows
4 tablespoons of desiccated coconut
1 tablespoon icing sugar
What you do
Line a 23 cm square tin with baking paper or parchment
Melt the chocolate and butter together in a large bowl or jug in the microwave (30 second bursts on full power) or over a bowl of hot not boiling water until the mixture is smooth and glossy, leave to cool for 5 minutes before adding your dried fruit and chocolate chunk mixture and the mini marshmallows, stir to combine then tip the mixture into the prepared tin and smooth the top.
Combine the coconut and icing sugar in a small bowl then sprinkle it evenly over the top of the chocolate marshmallow mixture. Place in the fridge for at least an hour or until the chocolate has set and is firm, remove and cut into 18 even sized bars.
